THE IDEA
What we believe
A good wine is the slowest thing on the table. It takes a season to grow and, often, years to settle, and in return it asks only for a few minutes of your full attention. In the glass there is a place, a year and the decisions of the people who made it. Most of us are never taught to read any of it.

We started IN WINE MIND to change that, gently. Together, over wines from every corner of Spain, we learn to hear what each glass is saying, and why it says it that way.
I
A curious mind is enough.
Whatever you know today, if you wish to go deeper into wine and truly understand it, you are most welcome among us.
II
The reason behind the score.
A score is only the end of a sentence. Famous or little known, every great wine earned its points for a reason, and we look for it together.
III
What we know, what we think.
At the table we keep fact apart from opinion: what is known, what critics say, what is simply our taste. The judgement is yours.
The tasting
A tasting, from the first pour
Not the tasting you may know: one winery, a row of glasses, a script recited from memory. Here every tasting begins with a question, and the wines are chosen to answer it. What does a vintage change? How does one grape speak in two different places? What has time done to a bottle? Can you find each wine with your eyes closed? Every wine is poured for the story it tells, and the circle is small enough to hear it.
I
Arrive
Everything is ready: a glass for each wine, three to six bottles chosen to answer the question of the tasting, and a little food to keep them company. Nothing to prepare, nothing to know in advance.
II
Taste
Every sense is invited: the colour and the light in the glass, the aromas, the first sip. Then the same wine again beside the food chosen for it, and the glass changes, as if someone had turned up the light.
III
Understand
Now the sommelier joins the conversation, and together we look for what lies behind what you taste: the place, the year, the hands, the reason the wine sounds the way it does.
IV
Talk
The tasting ends where good ones do, in conversation over the last glass. You leave with new words for wine, and with a pairing you can set out at home.
The formats
Three ways to join us
Choose by curiosity, not by label. Some guests come to hear how a single grape speaks in different landscapes, others to meet a bottle that time has changed, others for the quiet pleasure of a guess. Each format has its own rhythm, its own wines and its own way of joining.
Compare Spain
Why does one place taste like five different worlds?

Spain speaks in a thousand dialects, and this tasting lets you hear several at once. One grape carried from one landscape to another, and the question of how differently it sings by the sea and in the mountains. One region and one grape, but several houses, each with its own hand and its own idea of the same land. Or a wine that exists nowhere else, born in a single corner of Spain and meant to be tasted there, and only there. We pour them side by side, and the differences begin to read like sentences.
Rare Share
What has time done to a bottle?

Old wines are not on the shelf. They are seldom sold, and they cannot be ordered: they have to be found. Some we find in auction rooms; others come from the quiet cellars where a bodega keeps what it will not sell. Each is poured by the glass, in small measures, for a very small circle of guests, with the story of the bottle and the years it has kept. It is a taste of what time has otherwise taken away, and it will not come twice.
Blind Revelation
Who is in the glass?

The labels stay hidden. You have the colour, the aroma and the first sip, and we offer a clue, then another, until the wine begins to say who it is. This is not training for sommeliers, and nobody will examine you. It is a game for lovers of wine, played in good company. A wrong guess is half the pleasure: it shows how you imagined the wine, and the glass answers with something better. Most guests leave understanding wine a little better than they thought they could.
